Compliment Your Tea With Bermuda Banana Bread

Bermuda Banana Bread is made with local bananas that have already begun to go rotten. This is because at this stage the banana, when mashed, releases natural sugars that are high in flavour. Bermuda bananas are much smaller than others, such as Chiquita, which are imported into the island. There are hundreds of banana patches growing around the island and some locals even have them growing in the back yard!


  • 2 cups of mashed Bermuda Bananas
  • 4 cups of flour
  • 1 cup of sugar
  • 1 cup of vegetable oil
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 2 eggs


Preheat oven to 350 degrees. Next grease your two loaf pans. Set the pans aside. Peal and mash local bananas and place into mixing bowl. Then add sugar and oil. Blend together. In a separate mixing bowl combine flour, baking powder and baking sod together. Slowly add the flour mixture to the banana mixture while blending with an electric mixer. Add the eggs. When batter has reached a nice this consitency pour into the two greased loaf pans to equal hights. Place in oven for approximately 45 minutes to an hour.
