Partake In Traditional Bermuda Fruit Cake

Bermuda fruit cake was traditionally served up during weddings. It was the cake that most brides chose. Back then the entire three tier wedding cake was all fruit cake. However, today a typical three tier wedding cake would have at least one tier that was fruit, one plain and the other something special for the bride and groom. Most bakeries on the island sell fruit cake either by the slice, by the slab or you can order a whole cake for your family and friends.

Ingredients:

  • 1/2 cup of brown sugar
  • 2 eggs
  • 2 cups of flour
  • 1/4lb citron
  • Cinnamon
  • Cloves
  • Nutmeg
  • 1/2 cup butter
  • Seedless raisins
  • Sliced cherries
  • Dash of brandy
  • 1 cup of sugar

  • Method:

    Combine flour and butter. Rub together the egg yolks and sugar. Add flour and butter to mixture adding the fruit. Bake for one hour in a 350 degree oven.
