Lets Have Bermuda Rockfish For Dinner Tonight!

My favorite local catch is the Bermuda Rockfish or Grouper.  It is a very delicate fish but very sweet.  

How to prepare this fish

You can prepare this fish any way you like.  I prefer when it is grilled or broiled.  I am not a big fan of breading the fish fillets and deep frying them.  It is the preferred way for many locals to eat the fish.  When fish the rock fish is deep fried it becomes great filling for fish sandwiches or served alongside peas n rice and coleslaw. 

Where can this fish be bought?

Purchasing this fish from the supermarket can be quite expensive.  This fish is normally the higher price per pound fish you will find in the supermarkets across the island.  Imported rockfish may be even higher price per pound.  

The best way to purchase this elite fish is from the fisherman himself.  Otherwise you will just have to pay a bit extra at the grocery stores.

One excellent and quick method of serving up this beauty is the Sweet Chili Rockfish.

  • 4lbs Bermuda rockfish fillets
  • bag of spinach
  • 1 lemon
  • 2 cups of Chardonnay
  • Black pepper, garlic, onion, parsley
  • 1 Bermuda Lemon
  • Sweet Chili Sauce
  • 4 Bermuda potatoes
  • Tossed Salad
  1. Preheat oven to 450° F.  Fry the spinach in olive oil and garlic.  Lay down your first layer of fillets in a lightly oiled baking pan.  Season the fish with freshly squeezed lemon, crushed garlic,  chopped onion and freshly crushed black pepper and seasoned salt.
  2. Next, cover the fish in with spinach.   Layer the fish again on top of the first.  Season the fish with the remainder ingredients.  Pour the wine around the fish and squeeze the juice of lemon over it.
  3. Place in oven for about 18 minutes.  Once cooked drizzle sweet chilli and butter sauce over the fish.  Serve alongside roasted potatoes and a tossed garden salad with Italian dressing.
