Ginger bread is always on a menu for a family get together or party. It is an island favorite and goes well with vanilla ice cream. Many of the older Bermudians traditionally ate this after big feasts such as Christmas and Easter meals. Even to this day you can always hear someone ask if there is ginger bread for dessert! It is delicious and quite filling. Tea time in hotels and small guest houses like to serve this alongside Bermuda Banana Bread, Bermuda Pound and Fruit Cake slices.
Put all dry ingredients into bowl. Add Mazola oil then add molasses. Beat eggs and add last. Add 1¼ cups boiling water.
Bake at 250°– 275° for 1 ¼ hours.
