A Quick Johnny Bread Method For Breakfast

Johnny Bread is a favorite among Bermudian households mainly because it is a quick alternative to any other breakfast idea. It is made without yeast and therefore has the appearance of unleavened bread. Kids love it and you can eat it on the go. 

Eat it any way you like

Some prefer to have cheese melted inside of it or eaten plain with butter or syrup. Either way you like it is worth eating any day.  Great compliments with this bread include tea, coffee, codfish breakfast, any style of eggs or it can be eaten by itself. 

It was a staple among sailors

When this bread was discovered it was originally called Journey bread because it was quickly noted that it kept better than regular bread while on board a vessel or ship for long periods, when out to sea. Try this recipe for a delightful change to your morning routine.


  • 1/2 cup of sugar
  • 1 1/2 cups of flour
  • 1/4 butter
  • 1 egg
  • 1/2 cup of milk
  • 2 tbsp of baking powder


  1. Combine all dry ingredients. 
  2. Next cut in the butter until the mixture resembles crumbs. Mix milk and egg in a separate mixing bowl and then add to dry ingredient mixture. 
  3. Once everything has been blended nicely roll it out onto a floured board or counter top. Not too thin. Ideally the mixture should be about one and half to two inches thick. 
  4. Next cut out round shapes to fry on a hot frying pan on medium heat. It cooks just as a pancake would.

Tea Scones

This is also another favorite breakfast delight which can be toasted, grilled or just slightly heated with cheese, jam, peanut butter, butter or as bread with your favorite sandwich filling.  It is similar to Johnny Bread however this includes raisins and is a lot bigger and thicker.


  1. Mix 2oz margarine, 8oz of flour, raisins and a splash of milk. 
  2. Once the mixture is ready you make as many spoonfuls as you like, any size and place on a cookie sheet. 
  3. It should take about 10 minutes to cook in the oven or until the top is golden brown. It is optional to glaze the top with raw egg mixture to enhance the golden brown look when baking.
