Spanish rice

Spanish Rice is a very popular side dish here in Bermuda. It is very colourful and most local recipies tend to call for similar ingredients. Like all recipes they are modified to each chef's likes. This dish isn't as popular as traditional peas n rice but equally found on as many Christmas dinner, picnics or wedding reception menus. This dish can be made mild, sweet or spicy, all depends on how you like to eat it.


  • Churizo
  • Bacon
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 2 cups of rice
  • 4 cups of chicken broth
  • Thyme
  • Pepper
  • 1 Garlic clove
  • 2 tbsp of Tomato Paste


First you must cut up the churizo, bacon, green pepper, onion, red pepper and garlic into cubes. Next in a sperate frying pan saute the churizo and bacon. Remove the sauted meat from the pan and rest in a separate bowl. Next, saute your green, red peppers and onions until translucent. You can include your garlic also as this point. In a separate pot add your four cups of chicken broth (for those diets that are sensitive to salt you can substitute two cups of broth for two cups of water) When this liquid heats up add tomato paste, pepper, thyme and any other seasonings you like. Bring to a gental boil for a few mins. When the vegetables have reached the translucent stage add the two cups of rice and your meat. Stir the ingredients. Then add your broth mixture. At this point add the top and turn your heat to a simmer for 20 mins. DO NOT STIR RICE. When the rice is cooked remove pot from the heat. You can stir the rice to ensure an even distribution of the ingredients.
