Spice up breakfast with a taco omelette

In my house taco Tuesday's start with a taco omelette.   Often times we end up with lots of taco toppings left over so I decided a nice addition would be to use the same toppings, before they go to waste,  in an omelette.  Everyone in the house loves to eat them and I must admit it is quite a filling breakfast.  

Taco Tuesday starts early

The best thing about this breakfast idea is that it is loaded with lots of nutritional goodness.  The eggs  help our bodies build muscle and strength development, aids in weight loss and promotes healthy brain function.   The  bell peppers help to keep diabetes under control, reduces bad cholesterol, adds lots of rich antioxidants to our bodies and best of all keeps our skin youthful!  Onions make this taco omelette sweet and crunchy.  This ornament shaped vegetable is filled with lots of minerals and vitamins that help boost our immune systems.  Tomatoes bring high vitamin K and calcium to the fiesta which help build strong bones.  They also bring along vitamin A which works to improve vision, prevent night blindness and makes our hair strong and shiny.   Tomatoes not only bring more goodness it also brings juicy color to the dish.  Then there is the wonderful cheese.  I like the four cheese Mexican mix by Sargento.  It's a delicious blend of shredded Monterey Jack, Asadero, Cheddar and Queso  Quesadilla Natural Cheeses.  Cheese is very high in calcium and a good source of probiotics.  Its the icing on the cake, per say. A perfect blend of Mexican flavors all in one bite! 

Taco Omelette ingredients

  • 2 eggs, scrambled
  • sliced green and red bell peppers
  • sliced onions
  • 1/3 cup of chopped tomatoes
  • 1/2 cup of cooked ground turkey taco seasoned
  • 1/4 cup of 4 Cheese Mexican blend 

Method:

With a good sharp knife chop the bell peppers and onions.  In a cast iron skillet sprinkle a bit of olive oil.   For best results ensure the skillet is very hot - but don't allow the oil to burn.  Begin by  sautéing the bell peppers, onions and meat.  Once the vegetables reach translucent stage remove them from the pan.  Then add the scrambled eggs to the same skillet.  , add the sautéed taco topping blend and cheese.  Now comes the tricky part.  When the eggs have cooked on one side, you must use a good spatula and flip one side over.  Continue to cook reducing your heat so it is cooked thoroughly and the exterior doesn't burn.
